Chinese Style Steamed Fish with Fermented Black Beans and Shiitake Mushroom




INGREDIENTS  2 servings
  10 grams dried sliced shiitake mushroom
150 grams white fish
1+1 tbsp     sake
1/4 tsp        salt
  50 grams  leek, finely sliced diagonally 
    4 grams  green chile, stemmed, seeded, finely sliced diagonally 
  15 grams  ginger, cut into fine strips
    1 tbsp      Chinese fermented black beans, finely chopped
    1 tbsp      soy sauce
1/2 tsp        sesame oil

Place the dried shiitake mushroom in a bowl and cover with 60ml water.
Soak for 30 minutes, reserve the liquid.
Season fish with salt and sake, before cooking.


Mix the leek, green chile, ginger, Chinese fermented black beans,
sake, soy sauce.


Put the shiitake and 45ml of reserved liquid, in a dish.
Add the fish and the fermented beans mix to the dish.


Set up steamer with enough water in the bottom, then set rack  over
water.  Bring water to a rapid boil. Place the dish on rack and coverwith a lid. Steam fish for 15 minutes, until just done.
