Beef Stroganoff with a shiitake twist
INGREDIENTS 2 to 3 servings
15 grams dried sliced shiitake mushroom
200 grams beef chuck, cut into thin strips
180 grams onion, sliced
1/2 clove garlic, finely chopped
1 tbsp butter
1 tbsp white wine
90 grams sour cream
1/3 tsp salt
+ black pepper
+ Parsley, finely chopped, if desired
+ Paprika powder, if desired
Place the dried shiitake mushroom in a bowl and cover with 200ml water.
Soak for 30 minutes, reserve the liquid.
Put the butter, the onion and the garlic in a pot, set over medium
heat, and cook until onion get tender.
Add the beef, drained and squeezed shiitake mushroom, and brown the beef on both sides.
Sprinkle the white wine into the pot, and stir for 1 minute.
Add the all of the reserved liquid, and simmer for 7 to 8 minutes on medium heat.
Add the sour cream and season with salt and black pepper.
Sprinkle with parsley and paprika powder, if desired, before serving.
